...and my Thanksgiving recipe re-cap?

No-Bake Pumpkin Cheese Cake: 9 out of 10.  For the ease of making this pie, it ranks high on my list.  It satisfied my pumpkin urge, had plenty of added sweetness with the cool whip, and nutritionally it's not too bad.  I just wish it settled better.  Letting it set in the fridge doesn't quite firm it up enough while putting it in the freezer makes it more like a frozen dessert rather than a pie/cheesecake.

Sweet Potato Pie : 7 out of 10.  The problem with this recipe is that I think I thought I liked sweet potatoes more than I actually do.  What this pie mostly did, was make me crave good ol' fashioned Pumpkin, to which I had none.  All in all, though it held up well and I think the recipe was pretty right on.

Stuffing: 6 out of 10.  This one definitely took some effort and I wasn't thrilled with the outcome.  I found it too dry even after adding in more chicken broth than recommended and although it lured me with bacon as an ingredient, it didn't do much more for my taste buds than regular stuffing does.  I think I'll stick with the original next time.

We had a nice Thanksgiving with Chris's family this year.  His grandma passed away early Thanksgiving morning, so the holiday took on a bit of somber feel - but it certainly made us realize all that we have to be thankful for.  She was 94 years old and I am so happy that I had the pleasure of meeting Murle last summer in her hometown of Corning, IA.  She was a very special lady and I am glad she is at peace.
