Crock Pot Lasagna

Otherwise known as lazy lasagna.  A favorite in our house.

- 1 lb. Italian Sausage (we prefer a Hot variety) browned and drained
- 1 bag Baby Spinach
- 1 package of oven ready Lasagna noodles
- 1 jar of your favorite pasta sauce
- 12 oz. low fat cottage cheese
- 16 oz. Shredded Mozzarella (I used some Provolone this time due to running out)
- Crushed Red Pepper to taste
- Salt and Pepper to taste
- Canola Oil spray for crock pot
- 1/4 cup water

To Make:
- Prepare crock pot with non-stick spray
- Break noodles into pieces along bottom of crock pot
- Sprinkle half of your ground sausage over noodles
- Sprinkle half of your spinach over sausage
- Pour half of your sauce over spinach
- Pour half of your cottage cheese over sauce
- Sprinkle half of your mozarella over your cottage cheese
- Season to taste
- Repeat Layers once more
- Add 1/4 cup water once layers are complete

- Cook on low for 6 hours
- Don't serve for a fancy dinner party unless you are okay with your dish looking more like sloppy joes than lasagna
