Cheeseburger (Casserole) in Paradise

I like mine with lettuce and tomatoes.  Heinz 57 and french fried potatoes.  Big kosher pickle and a cold draft beer.  Well Good God Almighty, which way do I steer?

Also a really yummy dinner.

We were spoiled rotten after bringing Weston home.  The meals we received from neighbors, friends and family were enough to provide for four entire weeks of not cooking a single meal.  I didn't bring out one pot or pan nor did I open our EVOO for over a month.  It. Was. Glorious.  And sincerely appreciated.

But when that last meal got defrosted, it made it that much harder to start cooking again.  It's amazing how a love for cooking can quickly dissipate when you no longer have the need to.

Ever since, I have been taking baby steps to get myself back into the cooking groove with fast, easy and minimal ingredient recipes.  Unfortunately because of this approach, I have often been sacrificing taste and/or nutrition.  

But not with this dish!  This one is a keeper and meets all three of my requirements: Great taste, good (enough) nutrition and easy to prepare.

Instead of re-writing it, I will direct you to the recipe as I made very few adjustments.  My only suggestion would be to use Sharp Cheddar Cheese as I used the Colby Jack I had on hand and it could have used a richer flavor.

And, more pickles.  Always more pickles.
